Dr Matthias Schmitt is an enology researcher at Hochschule Geisenheim University, Germany. His work focuses on oenological technologies and innovation in winemaking, with particular expertise in wine dealcoholisation, low- and no-alcohol wines, sparkling wine production, and the technological challenges facing the wine sector in response to climate change.

He completed his PhD on the partial reduction of alcohol in wine using physical processes and has continued to investigate technologies for producing reduced- and no-alcohol wines while maintaining sensory quality. His research also addresses the impact of climate change on base wines for sparkling wine production and the selection of suitable grape varieties and technological approaches for maintaining wine quality under changing conditions.

Since 2021, Dr Schmitt has served as an expert for the German Federal Ministry of Food and Agriculture within the International Organisation of Vine and Wine (OIV). In 2025, he was unanimously elected Vice-President of the OIV Expert Group “Technology”, where he contributes to international discussions on new winemaking technologies, sustainability and adaptation to climate change.
