Fulvio Mattivi (Italy)
Currently full professor of Food Chemistry at the Center Agriculture, Food and Environment (C3A) of the University of Trento, and affiliated to the Research and Innovation Centre of Fondazione Edmund Mach in San Michele all'Adige.
His main research activities concern food chemistry, investigating different classes of polyphenols from the analytical, technological and nutritional point of view. More recently, his research interests have been directed towards plant biochemistry and metabolomics, and he is now coordinating biochemical studies in the fields of plant, animal and nutritional metabolomics. He coauthored 150 research articles and 2 international patents.
